Wind your way through the region from sleepy village to dusty hamlet or visit. Lagunas de Ruidera , a square-kilometre natural park, with 15 lagoons connected by rivers, waterfalls and subterranean rivers. Apart from excellent local wines and fine cheese, the region is known for many local dishes produced with fresh local produce.

Traditional gastronomy is simple but tasteful, with stews, game, sausages and the famous Manchego cheese. The region's excellent wines are a perfect match.

In the province of Guadalajara the medieval town Siguenza , with its great fortress and cathedral, is worth a visit. Its soil consists of red-brown sandy clay over limestone and chalk.
